Cooking with Wine: Chicken and Red Wine Sauce

Another fresh New Year is here! We at Nine Hills strongly believe in starting off the journey with good things, specifically with good wine and good food. So, here is something we recommend for every wine lover– Chicken & Red Wine Sauce! Here goes the recipe.

2tbsp vegetable oil
4 skinless chicken fillets, cut into chunks
1 packet button mushrooms, wiped clean
200g small onions, peeled
300ml Nine Hills Cabernet Sauvignon
200ml chicken stock
2tbsp tomato purée
2-3 garlic cloves, minced
2tbsp cornflour mixed in 2tbsp water
Coriander leaves for garnish

Take a large frying pan. Heat oil and add the chicken. Fry for about 5-6 mins until the chicken is slightly golden brown. Place aside. Add a little oil and fry onions and mushrooms in the same pan for about 5 mins.

Place the chicken back on the pan. Add Nine Hills Cabernet Sauvignon wine, chicken stock, tomato purée and garlic cloves. Cook for a few minutes. Blend in the corn flour mix and fry for 2mins until it thickens. Garnish the chicken with coriander leaves and a dash of lime.

*For added flavour, allow the chicken to soak up the red wine by putting it in the freezer for a few hours. Take out and reheat the chicken for 20-25 mins. This will enhance the taste of the dish. You can serve this yummy chicken with potato wedges, some boiled veggies and herbed rice.
